1. Nodo — Viceroy Los Cabos
Part of Viceroy Los Cabos’ resort-wide transformation, Nodo is a new Italian market concept introduced as the property reopens in San José del Cabo.
2. Archaea — Viceroy Los Cabos
Also new at Viceroy is Archaea, a hidden speakeasy concept. With Cabo’s cocktail culture moving beyond traditional resort bars, this is one opening to watch after dark.
3. Samba Culinary Journey — San José del Cabo
Recent local listings identify Samba Culinary Journey on Boulevard San José near the golf course as a new brunch-focused arrival, with a broad breakfast format and outdoor terrace.
4. Santaquiza — Cabo San Lucas
Santaquiza is among the newer casual concepts appearing in Cabo San Lucas, offering a counterpoint to Cabo’s luxury dining boom.
5. La Galería del Buen Sabor — Cabo San Lucas
Another recent Cabo San Lucas arrival, La Galería del Buen Sabor is part of a wave of smaller local openings expanding choices beyond the marina and resort corridor.
With genuinely new restaurants, menus and hours can evolve quickly. These are places to watch now, before the fall crowd decides which become Cabo fixtures.
