Main Dishes

  1. Pozole (red, green, or white): A hearty soup made with hominy (cacahuazintle corn) and pork or chicken, garnished with lettuce, radishes, onions, oregano, and chili. This is a deeply traditional Mexican dish, often enjoyed as the famous “recalentado” (leftover feast) in the days following Christmas.
  2. Tamales: Available in various styles and fillings (sweet, savory, with chicken, pork, or cheese with peppers). Being a famous Mexican dish, sweet tamales are often made as a dessert option.
  3. Stuffed Turkey: Prepared with a filling of ground meat, dried fruits, almonds, and spices. In Mexico, where religion plays an important role, turkey is also considered a classic dish for Christmas dinners.
  4. Bacalao a la Vizcaína: Rehydrated salt cod cooked with tomatoes, olives, capers, potatoes, and yellow chilies.
  5. Romeritos with Mole: A traditional dish of romeritos (a leafy green) cooked in mole sauce, served with patties made from dried shrimp.
  6. Adobo-Marinated Pork Leg or Loin: Marinated in achiote, sour orange, and spices, then roasted to perfection.
  7. Nochebuena Salad: A vibrant mix of beets, oranges, apples, pineapple, jicama, lettuce, and pomegranate, with a sweet and refreshing touch.

Side Dishes

  1. Tostadas: Perfect for pairing with pozole or enjoyed with refried beans, cream, and cheese.
  2. Buñuelos: Crispy fried tortillas sprinkled with sugar and cinnamon, served with piloncillo syrup.
  3. Christmas Punch: A warm drink made with fruits like tejocote, guava, apple, tamarind, sugarcane, and spices like cinnamon.

Desserts

  1. Atole or Champurrado: Hot drinks made from corn masa, ideal companions for tamales.
  2. Napolitan Flan: A creamy classic to wrap up the dinner.
  3. Rice Pudding: Made with cinnamon and raisins for a comforting finish.
  4. Apple Salad: Personally, my favorite dessert! It includes apples, walnuts, raisins, cherries, pineapple, cranberries, condensed milk, and other delicious ingredients.
