HUMO at Zadún Hosts Michelin-Star KOLI for a Fine Dining Takeover in Los Cabos

At HUMO inside Zadún, A Ritz-Carlton Reserve, Los Cabos delivered a fine dining experience that stands entirely on its own.

For travelers seeking elevated cuisine in Los Cabos, HUMO remains one of the most distinguished dining rooms in the region.

A Michelin-Caliber Night in Los Cabos

HUMO has long set the standard for fine dining in Los Cabos. Yet on February 28, the restaurant elevated that standard even further.

We were honored to be invited by the HUMO team to experience a special Michelin-star collaboration with KOLI Cocina de Origen (@koli.rest).

Chef Rodrigo Rivera-Rio (@rodrigoriverario), known for his Michelin-starred vision of modern Mexican cuisine, led the evening. Alongside him, sommelier Patricio Rivera Rio (@patricioriverario) curated precise wine pairings that complemented each course with elegance and structure.

Together, they transformed HUMO at Zadún into a stage for one of the most refined culinary experiences in Los Cabos this season.

This was not simply dinner.
It was a curated tasting journey built around fire, technique, and harmony.

The Tasting Sets: Precision, Balance, and Storytelling

The evening unfolded through thoughtfully composed tasting sets, each course building naturally into the next.

  • Miraflores Grilled Corn paired with Billecart-Salmon Brut Réserve offered smoke balanced by citrus brightness.
  • Land & Sea — black tempura, caviar, tuna, and dry aguachile oyster — delivered bold texture and contrast.
  • Half Moon Scallop with mandarin chalquita and smoked ají dressing brought precision and lightness.
  • Catch of the Day in Huasteco Pipían layered pistachio pipián, coconut, hoja santa, and cucumber with remarkable balance.
  • Australian Wagyu Cheek Curanto introduced depth through wood fire and earthy purée.
  • SRF American Wagyu Picanha followed with black garlic, charred tomatillo, beet, and sea salt foam.
  • Goat Milk Mostachón closed the tasting set with yogurt, walnut, orange, cajeta, and lemongrass in perfect proportion.

Wines from Casa Madero (@casamadero) elevated each plate without overpowering it, reinforcing the rhythm of the menu.

Every course felt intentional. Every pairing felt considered. The structure of the tasting sets created a seamless progression that defined the night.
